How to Make Moin-Moin (Steamed Savoury Bean Cake)

A staple of West African homes, especially those in Ghana and Nigeria, moin-moin is a steamed bean pudding packed with proteins. It’s made from washed and peeled black-eyed peas, onions and fresh ground peppers. It’s delicious, healthy and easy to make. Recipe courtesy of the Greenwich Pantry, London.

How to Make Moin-Moin (Steamed Savoury Bean Cake)

Ingredients

  • 500 g black-eyed beans
  • 1-2 fresh chillies - optional
  • 1 large onion, chopped
  • 1 tbsp of oil
  • 225 g fresh prawns optional
  • Warm water to mix
  • Leaves for wrapping the mixture or foil containers
  • ¼ tsp salt -optional

Instructions

  1. Soak the beans for 5 minutes, and wash them thoroughly to remove the skin. Grind or liquidize them until smooth, and then add the chillies and onions. If you haven’t got a steamer, arrange a false base with leaves or tin foil and bring it to a boil.
  2. Mix the ground beans with the other ingredients, then add the warm water a little at a time until the mixture coats the back of a wooden spoon. Place mixture on clean leaves (or foil containers) and wrap into parcels. Arrange the parcels carefully in the pot of boiling water, cover with a tight-fitting lid to avoid steam escaping, and steam for 45 mins or until the moin-moin is cooked.
  3. Refill or top-up the pot with boiling water if the water has all but gone during the cooking process. The parcels of beans should be firm to the touch after exposure to the air for a few minutes.
  4. Unwrap the leaves and serve with cold eko or ogi ( pap).
