Mama Gabi’s Ipekere (Plantain Chips)

I’ve named this popular Nigerian street food after my paternal grandmother, simply because ipekere is the food that reminds me the most of her. It was the weekly treat that she would give to us, knowing that huge smiles were guaranteed. Note that this is a pretty standard recipe, although you could easily spice it up – or make the sweet version – if that takes your fancy.

Mama Gabi’s Ipekere (Plantain Chips)

  • MAKES/SERVES 2 people
  • PREPARATION TIME 10 minutes
  • COOKING TIME 20 minutes

Ingredients

  • 3 unripe green plantains
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic powder
  • Vegetable oil

Instructions

  1. Using a sharp knife, top and tail your plantains, make a cut down the length of each and then peel away the skins
  2. Cut the plantains into very thin rounds using either a mandolin or a sharp knife. You could also use a grater. Decant into a large bowl
  3. Season your plantain rounds with the salt, paprika, ginger powder and garlic powder (omit if you prefer)
  4. Line a large plate or baking sheet with kitchen paper and set this aside. This is to soak up any excess oil from the plantain chips
  5. Once the oil has reached the desired temperature, add the plantain chips in batches to it, taking care not to overcrowd the pan.
  6. Stir the plantains using a slotted spoon
  7. The plantains will take about 5 to 8 minutes to be "done". But keep an eye on it and fish out one of the rounds to taste for readiness
  8. Once they are done, add to the large plate that you set aside earlier
  9. Repeat for any remaining batches

Notes

You can also bake these instead of frying. Set your oven temperature to 190 F and bake for about 20 minutes.
